Yes, you can have your caesar salad and eat it, too, with only 2 Weight Watchers points! 

I am a salad girl. I'm the one that gets a little bit too excited when I walk into a restaurant and see a salad bar.  But the problem is, I love it a little too much. You know ... the toppings like ham, bacon bits, croutons... the dressing... am I right, folks? Ruby Tuesday is my jam, you guys.

Sadly, though, my waistline is not a fan, and I've been attempting to follow Weight Watchers to lose a few extra pounds. Luckily, I came across their yummy (and egg-less!) caesar salad recipe, which only eats up 2 points! Hooray!

Weight Watchers Caesar Salad 2 points


Ingredients

¼ cup fresh lemon juice

2 Tbsp grated Parmesan cheese

1 tsp olive oil

1 Tbsp red wine vinegar

2 garlic clove(s), medium, sliced

1 Tbsp anchovies canned in oil drained (2 average, finely chopped or mashed with a fork)

½ tsp Worcestershire sauce

¼ tsp black pepper, freshly ground

4 cup(s) romaine lettuce , shredded, chopped, rinsed well and patted dry

Handful of low-calorie croutons (sorry, you will have to omit the croutons if you want to keep this  recipe 2 points - but if you must, add a few croutons and make it 3 points)

Instructions

Combine all ingredients, except lettuce, in a blender or food processor; purée until blended. (Note: Omit the anchovies if you do not like their flavor.)

Place lettuce leaves in a large bowl and toss with dressing until well coated. Yields about 2 cups per serving.
