Keto and Low Carb Chinese Food Recipes + Chow Mein Recipe

Lo Mein, Chow Mein ... noodles... carbs... my weakness, you guys. As if the keto diet wasn't enough, we had to give up our precious Chinese food.

It started with the Zero Carb Miracle Noodle (and they are yummy!), and then the handy-dandy Spiralizer (sweet! - an easy way to make noodles out of zucchini!)

You know, carrot noodles... coodles. You saw it here first, folks.

Thankfully, I've come across some pretty awesome keto and low carb Chinese food recipes that I knew I had to share with others looking for the same solution. Some of the best low carb chinese food options are Moo Shu (pork or chicken), chicken and broccoli (in brown or garlic sauce), and Egg Foo Young.

But first, here's my own variation of Zucchini Chow Mein...


Ingredients
2 medium zucchini
2 tablespoons low sodium soy sauce
2 teaspoons rice vinegar
1 tablespoon oyster sauce
1 tablespoon olive oil
1 small onion, diced
4 cloves garlic, minced
1 red bell pepper, thinly sliced
1 large carrot, julienned (get one here)
1 cup sliced red cabbage
sea salt, to taste
black pepper, to taste

Directions
Spiralize zucchini noodles, set aside
In medium bowl combine soy sauce, vinegar, and oyster sauce
Heat olive oil in a large skillet on medium high heat
Add onions and garlic, cook until soft
Add red bell pepper, carrot and cabbage. Cook until vegetables are tender (2 minutes)
Add the noodles and sauce and stir until coated. Continue sautéing for 3 minutes
Add a dash of salt and pepper to taste

That's it - so easy - and so delicious. You won't even miss your real noodles!
