Keto Low Carb Chocolate Fudge Recipe

The low carb craze has been around for decades, starting with the Atkins trend. Then, when everyone started saying how bad Atkin was for low carb diets, it became all about low carb. And then, over the last few years, when people realized they could lose weight super fast, it became keto - short for "ketosis" as in keeping your body in the ketosis phase in order to burn the most amount of fat faster than the gradual, step-by-step low carb or Atkins way. Which is fine by me.

I've had three kids, and with each one, I think I gained about 40 or so pounds. I was eager to get back to my pre-baby body, and the fastest, easiest, and who woulda thunk it way, was going the keto route. And thanks to Pinterest, there's an array of yummy keto recipes, from fat bombs to cloud bread to fat head pizza (terms I'd never even heard of 15 years ago!). There is truly something for everyone. And a fave of mine thus far, is this recipe for keto chocolate fudge! It's basically a fat bomb fudge recipe.

How To Make Keto Low Carb Chocolate Fudge

Ingredients
1 chocolate baking bar, min. 70% dark
12 tbsp coconut butter
1 tsp vanilla extract
3/4 tsp stevia

Directions
In a microwave safe bowl, combine coconut butter and chocolate. Microwave for 40 seconds or until melted and combined. Combine all the ingredients together in a bowl with a fork. Pour into a silicone loaf pan or a parchment paper-lined pan. Place into the fridge for 2+ hours or freezer for 1 hour until it’s solidified. Remove from the pan and cut into squares
