Chaffle Waffles

Ingredients


2 large eggs

1/4 cup fine blanched almond flour

3/4 teaspoon baking powder

1 cup shredded cheese

Instructions

Turn waffle maker on high and lightly coat with cooking spray

Whisk together eggs, almond flour and baking powder

Stir in cheese until combined

Pour into waffle maker and cook until crispy and flip on other side until also done

For the Keto Vanilla Custard Creme Anglaise

Ingredients


2 ½ cups heavy whipping cream
Seeds from ½ vanilla bean/pod
½ cup Swerve sweetener
6 egg yolks

Directions

Place the cream, seeds and sweetener into a saucepan and heat just before it starts boiling and remove from stove

Add egg yolks in a large mixing bowl and whisk until smooth. Pour the hot cream through a strainer, directly over the egg yolks while continuing to whisk the mixture together

Pour the mixture back into the saucepan and cook on low heat, stirring constantly, until the mixture thickens

Remove from heat and and let cool for 30 minutes
