How To Make This Cheesy Keto Zucchini Hot Dish Casserole
Ingredients2 medium zucchini, quartered and chopped (about 4 cups)
4 tbsp butter, sliced into small pieces
3 large eggs
1/4 cup heavy cream
1/4 cup chopped onion
1/2 tsp salt
1/2 tsp pepper
2 cups shredded cheddar
1/4 cup grated Parmesan cheese
Instructions
Preheat oven to 350 degrees F
Add zucchini to a large pot of boiling water; boil for about 5 minutes and drain
Lightly spray baking dish with nonstick cooking spray and dump the zucchini in and spread evenly; top with butter and set aside
In a large bowl, stir together the eggs and cream. Add in onions, salt, pepper and 1 cup of cheese; pour over the zucchini in the dish
Top with remaining cheese and Parmesan; bake for 30-35 minutes until the cheese is bubbly and top is browned
